Cupcakes and Photos

As requested by erqsome, I am posting the recipe for the Earl Grey cupcakes I made. And some photos, whilst I'm at it.

Earl Grey Cupcake with Lemon Buttercream
Originally from Desert Candy.

I made 12 cupcakes and 2 muffins with this mix so probably makes about 18 cupcakes

1/2 cup unsalted butter (I used margarine)
1 cup sugar
2 eggs
1 1/2 cups self-rising flour
1/2 cup milk
2 bags or 2 tablespoons earl grey tea (I used loose leaf but ground it up more)

1. Preheat oven to gas mark 4 (350F, 175C)
2. Line or grease cupcake tray
3. Cream sugar and butter until light and fluffy
4. Add eggs and beat well
5. Beat in milk
6. Fold in flour and tea until combined
7. Fill cupcakes 2/3 full and bake for 20 minutes (until a skewer comes out of the cake clean)
8. Leave to cool

Lemon Buttercream:
1/2 cup unsalted butter (again, I used margarine)
2 cups icing sugar
1 1/2 tbsp lemon juice

1. Cream butter
2. Mix in lemon juice
3. Beat in icing sugar gradually until a smooth, slightly stiff cream is obtained (you may need slightly more or less icing sugar than quoted)
4. Spread or pipe onto cooled cupcakes

Those look AMAZING! Man, I need to get some Earl Gray in!
